In certain cases, the irate guest is going to be irate no matter what. However, getting upset with a guest even when they're wrong generally exacerbates the situation. The best solution is generally to try to see it from their point of view and what YOU would want done were the situation reversed. Of course, one problem is (for example in the hotel industry) some guests will complain about anything and everything in an attempt to get as much as they can complimentary as possible.
